Tilapia Sliders With Lobster Sauce

1 pound Regal Springs Tilapia Fillets, cut into 1/4-lb. pieces
Juice and zest of 1 lemon
1 cup + 2 tablespoons mayonnaise, divided
1/2 cup lobster meat, cooked, picked and roughly chopped
1/4 cup ketchup
2 teaspoons chives, minced
1 teaspoon Dijon mustard
1/2 teaspoon Old Bay Seasoning
dash of TABASCOĀ® brand Original Red Sauce
grapeseed oil
iceberg lettuce, shredded


  • Reserve 1 tablespoon lemon juice. In a separate bowl, make the lobster sauce: Mix 1 cup mayonnaise, lobster meat, ketchup, remaining lemon juice, lemon zest, chives, mustard, Old Bay Seasoning and TABASCOĀ® Sauce. Set aside.
  • Season Tilapia with salt and pepper and brush with a touch of grapeseed oil. In a hot skillet over an open grill, sear tilapia until firm and flaky (about 3 minutes per side). Drizzle cooked tilapia with the 1 tablespoon lemon juice.
  • Brush insides of buns with remaining mayonnaise; briefly toast buns on all sides.
  • To assemble sliders, place a dollop of lobster sauce on the bottom of each bun. Top with lettuce, tomato and grilled tilapia, then a healthy dollop of lobster sauce. Close sandwiches with tops of buns and serve immediately.
