Tilapia Burrito Bowl

Ingredients

4 fresh Regal Springs Tilapia Fillets
1-1/2 cups water
1 (6-oz) box instant
yellow rice mix
2 tablespoons vegetable oil
1/4 cup red onion, diced
1/4 cup canned refried beans
4 each flour tortilla bowls
1/4 cup cheddar cheese
2 tablespoons sour cream
paprika
salt
black pepper

Instructions

  • In a microwave-safe container, combine water, rice mix and 1 tablespoon oil. Microwave on high for 2-1/2 minutes. Stir and cook for an additional 2-1/2 minutes. Set aside.
  • In a sauté pan, sauté onion in remaining oil and set aside.
  • In another microwave-safe container, warm refried beans and set aside.
  • Add Regal Springs Tilapia loins to the hot sauté pan. Cook approximately 4 minutes per side, to an internal temperature of 165ºF. Remove from pan and season to taste with paprika, salt and pepper
  • Portion rice into tortilla bowls. Top with refried beans, onion, cheese, tilapia fillets and sour cream, and serve.
