Tilapia Stir Fry

½ pound Regal Springs Tilapia Tenders
2 tablespoons canola oil
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 cup broccoli florets
8 ounces brown mushrooms, sliced
1 cup snap peas
2 tablespoons rice wine
½ cup black bean paste
1 small red chili pepper, finely dice
¼ cup green onion, sliced
- In a wok, heat canola oil until very hot.
- Add bell peppers, broccoli and mushrooms, and stir. Add rice wine and black bean paste.
- Add snap peas and Regal Springs Tilapia chunks, stirring well for 2–3 minutes.
- Finally, add the diced chili pepper and green onion.
- Toss and serve at once, with rice if desired.
