Grilled Tilapia BLT

Ingredients

4 fresh Regal Springs Tilapia fillets
4 brioche buns, sliced in half
12 strips bacon, thick cut
paprika
salt
black pepper
4 slices tomato
8 leaves bibb lettuce
1/4 cup mayonnaise

Instructions

  • Toast insides of buns: In a dry sauté pan over medium heat, place brioche buns, cut sides down. Check frequently until toasted to your liking, then remove and set aside until ready to use.
  • Using the same pan, cook bacon until crisp, turning over once. Remove and set aside.
  • Grill Regal Springs Tilapia fillets approximately 4 minutes per side, until the fish flakes. Remove from grill and season with paprika, black pepper and salt.
  • Spread mayonnaise on both sides of each bun. Assemble sandwiches by placing one tilapia fillet on each bottom bun, followed by bacon, tomato, lettuce and top of bun, and serve.
