At Regal Springs, we have spent years proving that tilapia can be more – raised with exceptional care, consistency, and a commitment to quality that sets it apart from the conventional standard.

At the same time, the global seafood landscape is evolving. Supplies of traditional wild-caught whitefish such as cod and seabream are becoming increasingly constrained, driven by stock limitations and rising demand. This shift is creating a growing need for reliable, high-quality whitefish alternatives that can meet both culinary expectations and supply consistency.

We believe premium tilapia deserves a place alongside the world’s finest whitefish. That is why we are proud to introduce King Tilapia — a new premium tier designed to redefine quality expectations for the category.

Our farming system produces large, high-quality fish, with a harvest mean weight of approximately 1,100 g per cage, and individual fish often reaching 1,500 g or more. This larger fish size enables the production of our thick, premium loins starting from 106 g (3.8 oz) and beyond, offering a mild, clean-tasting whitefish with strong structural integrity and excellent cooking performance. At a time when global supplies of traditional whitefish such as cod are tightening, King Tilapia provides chefs, retailers, and buyers with a reliable, year-round alternative that consistently delivers both quality and availability.

A New Standard for Tilapia Quality

King Tilapia represents the highest tier within The Global Open Standard for Tilapia Quality, an open framework introduced by Regal Springs to bring greater transparency and differentiation to the tilapia category.

The standard defines four quality grades: King, Prime, Choice, and Base — based on objective criteria covering farming practices, target sizes, processing quality, animal welfare, nutritional composition, and culinary performance.

At the top of this framework sits King Tilapia, representing the pinnacle of tilapia quality.

The Pinnacle of Tilapia Quality

King Tilapia is produced through a carefully controlled production system designed to protect fish welfare, minimise stress, and preserve natural muscle quality from lake to plate.

Key principles include:

  • Low-stress farming in clear, oxygen-rich lakes
  • Optimised, high-quality feed
  • Expert farming know-how and carefully selected genetics
  • Fish remain in water until processing
  • Electrically stunned to preserve fish quality
  • Pre-rigor processing: from harvest to freezing in a controlled, rapid timeframe

These practices ensure that King Tilapia reflects the highest standards of integrity across the entire production chain.

King Tilapia Loins: A Premium Cut

The King Tilapia Loin represents the most premium cut of the fish, taken from the thickest dorsal portion of the fillet.

To achieve King grade, loins must meet strict culinary criteria:

  • Loins with a minimum size of 106 g (3.8 oz)
  • Minimum thickness of 19 mm
  • Cooking yield from fresh or deglazed frozen loin to cooked: >85%
  • Clean, mild flavour
  • Bright white cooked appearance

The result is a thicker, more consistent, superior cut, with excellent cooking performance and a refined eating experience.

Raised in Deep Natural Lakes

All Regal Springs tilapia are raised in deep, pristine natural lakes, where large open-water enclosures allow the fish to swim freely. Combined with carefully formulated, high-quality tilapia feed, these conditions support healthy growth while maintaining the clean water environment that produces fish with firm texture, lean meat, and a naturally mild flavour.

These deep-water conditions ensure:

  • Fish do not forage on the lakebed
  • Diet is fully controlled through high-quality feed

Most recently, King Tilapia was endorsed by UK Fish Sommelier Andrej Urosevic, alongside MasterChef Champions Ping Coombes and Thomas Frake, following a chef taste test that highlighted the fish’s firm texture, mild flavour, and excellent cooking yield. Their feedback reinforced King Tilapia’s suitability for modern professional kitchens, where consistency, natural quality, and minimal moisture loss during cooking are highly valued.
